Pulled Pork and Smoked Chipotle Peach Salsa

Sunday I beat the heat by staying (mostly) indoors. My pops dropped off some veggies from his garden, so I decided I should can some salsa. While I was out and about, I stopped into Sam's and loaded up on butts.

Anyway, I did 4 pork butts with a new rub I picked up at the local farmer's market. These butts were trimmed a lot more lean than I was used to, so I decided to go with the foil method.

After seasoning, and the drum was up to temp I tossed them on.

Holding steady on temps, I went off to a neighbor's house to snag some more tomatoes and peppers. Then went on to the grocery store to grab the rest of my salsa making supplies, and dropped them in the drum too.

While the butts cooked away i ended up making about 15 cans of salsa, then wrapped up the butts and stuck them in the oven to finish off.

Grabbed my handy dandy specially crafted pork pullers and went to town.

All in all, it turned out to be a pretty productive day.

Thats my plan for this weekend, put a Butt on the smoker.

22 peeled tomatoes
5 large onions (they use a mix of yellow and white)
9-11 hot peppers (usually a mix of serrano and jalapeno)
1/2 cup sugar
1/3 cup salt
1 cup vinegar (they use white)
1 "medium-size" can of tomato paste (my mom said the size up from the really small ones at the grocery store if you can find them)
2 green bell peppers
10 peaches pealed
4 chipotle peppers in adobo sauce
2 full bulbs garlic
2 bunches cilantro

-- blend all ingredients in a blender or food processor
-- cook 30-40 mins. to desired thickness

Once in the jars are you doing a "water bath." Or is this just kept in the refrigerator and eaten within a short period of time?

I would guess this comes out fairly spicey. That's the way I would like it, but for my wife would probably have to tame it down abit. Do you consider it spicey?:drama:

It definitely has a kick, but smoking the jalapenos tamed them a bit. The chipotles are where most of the heat comes from, but the peaches fight the heat/compliment it really well. My GF does not like spicy food, but LOVES my salsa. :thumb:
