So Wednesdays are now Simply Marvelous days, eh? Those look awsome! Thighs are my favorite!
 
Chicken Thighs are the "Ribeye Steak" of the Chicken,
and those look great...a so does the salad.
 
Dome open or closed during cooking? With the dual function cap off it would seem that the temp would go higher than 300, or I could be wrong.
 
If you have a good seal than you can run with the cap off ...I prefer to leave it on that way I can adjust the temp on the egg +- a few degrees..

BTW thighs are my favorite and those look great!
