Default Monday night meat loaf

My wife has been eating a gluten free diet for the last few weeks. So I read that to make a gluten free meatloaf that you use Parmesan cheese instead of bread crumbs so I gave it a try. ImageUploadedByTapatalk1353378160.823446.jpg
I got the mini crusing along at about 300

All in all it was ok I can't say that I preferred it to my normal recipe but it made the wife happy

I read that instant potatos make a good substitute for bread crumbs. Never tried it though. The potatos supposedly help it stick together.

My wife is doing the same thing...gluten free. I made a meatloaf last week and substituted crumbled lays potato chips for bread crumbs...YUMMO!!
