Lamb was cooked to pulling Stage, about 10 hours.
Lovely bark.
Flatbreads.












Now we are making Croquettes out of the pulled Lamb, Nice and smokey.

Hard to explain what Sumac does, sweet with out being Sugary I suppose, maybe even a tart taste.

Then we made Croquettes,
mediteranian Lamb, Goats Cheese and Dry mashed potato.
Crumbed in Panko.







Half where deep Fried, the other half ,browned in a pan then over the coals,

Deep fried

Grilled over coals.

Dinner was served.
The grilled ones had a much better crunch and tasted dryer, my prefered method.


Reheated for breakfast, even more prefered, flavour developed very nicely.

Looks amazing. What is the cost per lb or kl of a whole leg in Australia? Lamb chops have come down to $3.97/lb here but whole leg is waaay more expensive
