Brisket. Slathered w/ mustard and 'magic dust' rub.
Don't know if pic shows it, but it looks good and ready to eat just like this:

The Traeger has been churning its heart out for about 2.5 hours now. It was below 30deg out when I started so the smoker is working hard.

Will report back with pics assuming it turns out ok.
