I really wanted some short ribs but two stores and no luck. So these were calling to me.


fast forward 4 hours




So I followed Bluedawgs suggestion of HnF.
My only regret so far is not checking after 3.5 hours.. They were overdone for my preference aka falling off the bone.

Cash n Carry didn't even have tri-tip.. GRR gonna have to find a new source.

I have a question for ya. I like your tray--where did you get it? All mine are too short for brisket & ribs.

Thanks! They were very tasty. And I have enough for lunch tomorrow Whoot!

That was one we picked up at Cash n Carry.. They have a few sizes and the bigger ones are two big for everything including storage. It is too small for most packers but I just let a little hang over the ends while toting it to the uds.

Looks like a half size 13X18 sheet pan. You can get them at Sam's or RD. Sam's sells them in stores in a 2-pack or online as singles. They hold up really well, BTW. I have had them damn near under the fire with no warping or anything.
