Are those sides, or is it served on a bed of...cabbage? and topped with onions and peach?

This was a reverse sear after the IT hit 120 - over the coals direct for a minute or so per side. A perfect medium rare and oh so tender and juicy. Not bad for catfood, eh Dog?

But the point was that the meat should speak for itself and no sides was a special rule. Personally, the chop did not need the lettuce to look great...and iceburg? Iceburg is boring and flavorless, you could have at least used Romaine or Butter lettuce. Oh crap, I'm starting to sound like someone else I know . It is a beautiful chop and I accept the onion slices and peach half on top since that's part of the cook but I think the lettuce should be considered a side. Did you eat all of them? If not, reheat and replate without the lettuce.

Almost 20 OZs. Time to air dry...





A little parsley...



Some Rub Co. Santa Maria Style...



And now to air dry in the fridge for a day...
Times up, ready to fire up the grill! I used hickory chunks for the smoke.



I did it indirect up to 110 then reverse seared for about 1 minute per side.



Rested for a bit...




OK, my mouth is watering now so I'm ready to cut into this baby! MMMMM, perfect!
