I did a turkey breast last year. i had the grocery store butcher cut up a whole turkey and debone the breast. I brined it and put stuffing and rolled and tied it. It came out great. I bought a boneless breast a couple of moths ago and did it on pellet cooker. Also came out great. Gotta go light on smoke as it will be overwelming for most who don't regularly eat real Q.
