I'm planning on doing 2 turkey breasts in the pellet brined then injected I'm thinking about 180 for about 1.5 hours then 350 for 2.5 hrs for a 7 lbs breast
I cooked an 8 pounder at 275° Sunday on my Assassin and it took between 2.75 and 3 hrs. If you have a meat probe for your grill just use it and cook to 160° pull and tent with foil and it will get to 165° easily.
