My wife said she wanted sliced pork for lunch Sunday so I said "I will try". Those medallions are not as easy as you think they are especially when you over cook them. I still need a lot of pratice.





A little camera ed would not hurt either.

I love practice. And lets be for real here for a second. I would rather eat BBQ that is overcooked or a so call BBQ failure than anything fast food wise. Am I right?

I watch the YouTube video that manbearpig posted on how to trim a pork butt then just trimmed, injected and rubbed. Put it on the smoker for about 12 hrs running at 250* then wrapped the butt in foil and let it rest in the cooler for 2 hrs.
