Default Gotta love a butcher that will....finished pron added

Cut your brisket fresh off while its still hanging :)

Got small brisket (5lber) - first one ever

and small butt 5lber......

smoking them over kingsford and some very nice dry oak. Had it chunked up in the garage for several years.

Just put them on a few minutes ago

20 mins in WSM is already up to 200 - had to go close a few vents.

Hopefully an easier smoke than my first one, was 30mph winds and cold and damp. Its a balmy 55 degrees right now.

thanks guys.... just pulled them off.

They may have been a little past my desired temp. I had to run some errands and stopped at the local watering hole.... dammit - people kept buying me beer.

Butt was at 199 when I came home, its resting comfortably.

Brisket that was my first adventure we will see in a couple hours I guess.

OK a little Pron action....

Butt falling off the bone just sitting there :)





First time every tying some Brisket....very tender, even if I had trouble getting against the grain. Great smoke flavor, very happy with the turn out.



Finally getting to eat today



and Im sitting here all alone...wife is out of town.
