Question Hot N Fast Pork Butt

Good evening farkers, I'm doing a 7lb Boston Butt going on tomorrow @7am and need it finished by 2pm or so. I'm gonna give the Hot N Fast method a whirl, my thinking is 275F-300F with 3 chunks of apple. I wasn't planning on foiling or spritzing. My question is do you guys think I'm missing anything or need to give myself more time? Thanks in advance!

I cook 10 lb all the time at 275* should be done a little over six hours. And then let it rest you should be good at 7 Lbs

Is that time frame including the rest? If so it's only about an hour, put'er on at 6:00

Mine went 8 hrs exact at 300-310* Yesterday.

@4ever3 Yeah that includes an hour rest, perhaps 6am is a bit more condusive to my time frame. Thanks

Look at it this way, if it probes a little early, just plunk it in the cooler and add a little rest time. On the other hand if she hangs in the stall and won't probe till the last minute then your rest time suffers. Better to be done an hour early than an hour late.

My 7.5 lb butt went 7.5 hours at 300 last week before it probed tender at 198. Then I rested it an hour. 8.5 hours total time.
