Yes, all large pieces of cooked meat should rest. I rest my turkey
loosely rented with foil for 20-30 minutes.

Yes.
Absolutely yes.
They are big birds that can fly at 55MPH and run at 25MPH and that is very tiring.
They can't see chit at night so that is the best time, just pop them high on a branch in a tree.
