Chip, those boxes are looking mighty fine, especially considering its only your second contest! And you remembered to remove the toothpicks! I'd lose the extra rib on the right though.

Had a touch time with scores this weekend, especially pork shoulder which came out great but a couple judges hated. There's always another contest, though!

Thanks Clint. No more toothpicks for us. We dusted ourselves off, and are ready to mix it up in New Holland.
I was hoping to get a few more critiques.

Also, if anyone wants another option for a restaurant while at New Holland, the Hilltop in Ephrata (15 minutes west of Rte 322) is a fine choice.

I would like to see more bark in that pork box, meat looks plain, The brisket look a bit dry . Chix looks good . I would turn the ribs the other way, but thats just me

Funny sled said that. I was thinking the same thing and was going to ask if it is something that people look for.

And your boxes. Very impressive for 2nd contest.
 
Chip, I'll definitely look into that restaurant. I know we were all hoping to find an all-you-can-eat joint that's open past six so we can shower then eat Saturday night.

Here's what 29th out of 33rd place pork looks like (though I touched up the few sauce spots and evened out the garnish before turn-in). May go a bit smaller, a few less and a touch less bark on the chunks but really no different than what I normally do well with. Luck of the draw, I guess.

SIDE, What were your scores if I can ask. Doesnt seem right.

I'll have to get them and post them tonight. Don't think I haven't been top 10 in pork in a few years and this was super tender. The only change was putting the butts back on (WHOLE/UNPARTED) with a dusting of rub for 10 mins or so to reset the bark. I'll drop that step and see what happens in New Holland.
 
Side - your pork looks awesome. Not knowing taste, my pork box looks exactly like yours for Washington DC we took third, I did the same exact to the tenderness and taste in wildwood and took 52nd out of 62 teams. Pork is a crazy category. I have done away with the slices, they seem to hurt me more then help me.

Yeah, I chalk it up to an off day with the judges. It happened with brisket in Green Lane and the same brisket method was back in the top 10 this past weekend. It's all just a tune up for The Battle of the BBQ Brethren anyway...

That box looks great to me.

There is an AYCE place not far going east on 322 called Shady Maple, about 15 minutes from New Holland. Is is HUGE. It's the typical Dutchie type food, and there is no booze. It is worth the experience and if you have kids, there is definitely something they would enjoy.
