John, no Texas toast here , had to use Colorado toast but it sure was good any way. Hope this is what you had in mind

I heated three left over slices of the smoked fatty, easy over fried a couple of hen fruits and cheesed em....good stuff.

Looks pretty good from here. Missing the bacon and gravy though.
