Default Fatties - Back to Basics

Fatties are such a forgiving cook It's easy for me to get off track when cooking them. Today after the buckboard came off there was still a low fire in the Egg and I had the grates as high as I could go. The pit temp was 200°. I put two fatties on, only pepper for seasoning, with some apple wood. I cooked them using this "very raised direct" set-up and they came out just like they are supposed to...... 3 hours time for 170° internal. I rotated them two times. Wrapped in foil & rested until they were down to 150°, then into the fridge for the cool down. I just reheated an end slice and it was one of the moistest ones I have cooked in a long time.

I use Fatties to make meatloaf.

Pork Fattie and Beef Meat Loaf


CRUMB MIXTURE:
6 ounces Milton's Garlic & Herb Crackers or garlic flavored croûtons
1/4 teaspoon ground black pepper
1-1/2 teaspoons kosher salt
1/8 teaspoon cayenne pepper
1 teaspoon chili powder

VEGETABLE MIXTURE:
1/2 yellow onion, roughly chopped
1 carrot, peeled and broken up
3 whole cloves peeled garlic
1/2 bell pepper, seeded

MEAT MIXTURE:
1 lb. ground beef
1 lb. package of Jimmy Dean - Sage Pork Breakfast Sausage

1 egg
2 Tbs cream or milk

1/2 cup of your favorite barbecue sauce

Pre-heat oven or smoker to 350 degrees F.

In a food processor, combine crackers, black pepper, salt,
cayenne pepper and chili powder. Pulse until the mixture is
fine crumbs. Place this CRUMB MIXTURE into a large bowl.

Combine the onion, carrot, garlic, and bell pepper in a food processor.
Pulse until the VEGETABLE MIXTURE is finely chopped, but not pureed.

Combine ground beef with pork sausage in a bowl and mix well.

Add the VEGETABLE MIXTURE and MEAT MIXTURE to the CRUMB MIXTURE. Mix well.

Add the egg and cream and mix thoroughly, but avoid squeezing the meat.

Place the meatloaf mixture into a 2-piece meat loaf pan and press down to evenly fill pan. Or mold into desired shape and place on a cookie sheet.

Coat top of meat loaf with 1/2 cup of your favorite barbecue sauce.

Bake 60 minutes at 350 F, or until center, internal temperature reaches 165 F.

I may try something this weekend... Why not make a fattie with a hollow inside, then fill it with gravy, close off the end and cook that way???
