I've been using a lot of the venison from last season.

Made a batch of Andouille the other day with some of the stash.

I like to use pork fat with my venison...

wanted to make some Hoppin John so I sautéed the onions, garlic and seasonings, added chicken stock and some of the venison Andouille. Then let them simmer in the drum.
I used the BPS drum and raised the hot coal rack to the top level.

grilled the venison and added rice and beans to the stock. (used pintos, I was out of black eyed peas)

I ran the skillet of cornbread under the broiler to brown the top a bit more.

The Andouille added a little bit of heat to the breakfast. I liked it! :)

Thanks for looking!

I am hungry now!! What grinder and stuffer are you using?

Thank you rcpilot, the grinder is a cheap Oster but it's lasted several years so far. I got the stuffer from Brethren The Kapn (Tim). It's a 5lb Lem. I really love the thing. Makes stuffing go so much quicker for me.

Thanks again!

Great post Jeanie! I too am a lover of hash and yours looks great. I've never done sausage but have been tempted by your posts and blog. You go girl!

Excellent! Might have to make some sausage with my venison. You are an inspiration!

Looks great, Jeanie! I usually make snack sticks with most of my venison but I just might have to give this a try!

Love this thread!!!! It makes me smile when hunting and great cooking come together. The only thing I could even begin to suggest is to reserve some of the sausage mix before stuffing and use in a smoked meatloaf!

Thank you Grain Belt! I love your meatloaf idea. I used all of this batch for sausage but can make another batch... still have quite a bit of venison in the freezer. Thanks so much for the kind comment and the idea. :thumb:

They look fantastic! I need me a large capacity stuffer like that

Thanks Dave! This 5 lber has been a time saver for me. Works great!
