saran wrapped butt
I cooked a butt today using Chris Lilly's secretinjection. What I did diffrent this time is after I cut the fat cap off, I wraped it it saran wrap, injected through the wrap, then wrapped it back up tighter than a kilo of Columbian uncut. When i got it out the fridge this morning to rub it, maybe only a 5th of the injection had come out into the pan than what normally does. End result was one of the juiciest butts I've ever had. (pun intended)....Will defienetly do this from here on out!

I wrapped when it got to 170. 1 1/2 hours later it was at 197. Went quick.
