Default Monday ribs and ABT's

Having afternoons like this off sho nuff makes up for the cruddy weather days. It's in the 60's this afternoon.

Picked up a pair of the fattiest ribs I could find at he grocery store today. I aim to do them justice, too.

Got my trusty Wicked Good lump and apple wood chunks burning.

Got my water pan in place and filled.

Moving on to the inside work. Membranes pulled and rub is taking nicely.

Now for the tricky part......getting this Akorn in the sweet spot......

Running low on rub....

Also running low on suds....

May have to get my wife to drive me on a beer run.

She'll love that idea.

Glad I've got tomorrow off work. Dis gonna be good.

It's getting serious 'round here. Wife just showed up flaunting her new haircut. Gotta take time out to oooh and aah over it. Kinda short but I'm starting to like it.

She responded favorably to the beer run suggestion. Be right back.

Every single bit of stress goes away as soon as I fire up the coals. I don't know what others do to mitigate tension...but this is my thing. It works and the family seems to enjoy the byproduct....heck, they make constant requests for future grillwork.

Great hobby. Everybody wins. :)

Ground pork.

Hit 'em with the hawt rub that wife wanted.....no idea why...this stuff is too hot for most I know.

I'm grateful that last week's crutches are not needed. Knee is cooperating enough for me to hobble around.

My main concern is to not give anyone food poisoning......or run outa suds.

Just hit the ribs with apple juice spritz.

Bacon fat dripping down never hurt a thing!

Doing well so far.

ABT's done.

Tried one. Was tasty !

Pulled the ribs and wrapped them.

Back on there in the wrap with all the additional flavors steaming into them.

Super Bowl Sunday is going to be fun this year.

My son and I will be going to a WWE event early that afternoon. We had a blast last time. Good seats near the ring and plenty of beer make it fun. The Divas are awesome, too.

They'll be a narrow window of time to grill late afternoon. I'm thinking we'll fire up some wings first and have a few different sauces for them.

Another cool finger food I thought about was a large salmon fillet on the grill.....sliced thin...rolled into a tortilla.....slice the roll and serve it with the wings accompanied by a wasabi dip.

I'm still waiting for my family to decide on what they want.
