Default New smoker!

OK Joe smoker is being seasoned. I have some mods planned (convetion plate and chimney extentsion) but wanted to check it out before mods. Holding steady at 265 by fire box and 240 by stack. I love tending the fire all day that's why I went off set.

And of course the ceremonial fatty about 3 hours into seasoning.

So far cons: its a fuel hog. But I knew that. Need that convection or tunning plates to even out heat and some but jot as much as I thought there would he leakage at firebox.

Pros: heavy duty steal. Holding temp like a champ. Tons of surface area for lots of product. Looks cool!

Nice looking cooker. A 25* difference is not too bad, especially without any mods.

Fatty turned out taste as always. 8lbs of lump kept her at 250ish for 4.5 hours. Let it die down still holding temps in low 200.
