Decided it was time for some spares. Here's the story.......

Whipped up some of my homemade rub......

Grabbed a 3 pack of spares from Costco......

Pulled off the membranes........

Trimmed them up a bit........

Hit up both sides with a little yellow mustard........

Gave them a good dose of the rub........

Let them rest for a few hours, wrapped in plastic wrap. Ready to go......

Put them on the Chargriller offset....lump charcoal and apple...250 degrees....

Hit them with a cider/cayenne/lemon mop after 2 hours......

Pulled them off at 3hrs and got the foil ready.......

Wrapped up for just over a hour......

After I pulled them out of the foil, I put them back on for about 30-40 minutes, and hit up a couple of them with my homemade sweet & spicy sauce.

Here they are when they were done. Front one with no sauce.......

They turned out great....the taste/texture/color was wonderful.......

Honey, brown sugar and some squeeze butter/margarine for the foil step?

They looked great by the way.
