Christmas Dinner for 80 people
.i have commuted to cooking a turkey dinner for 80 people.
Menu consists of: Turkey mashed potatoes Stuffing Green bean casserole Buns Desserts How many turkeys will I need? Any stuffing recipes for 80 people? Thanks in advance

It would help knowing your age gender mix. If you are dealing with the normal family mix I'd figure 6-8 ounces of cooked meat each. I'd also consider cooking a couple whole birds for some dark meat and bones for stock but breasts only for the balance. Much better yield with breasts. Maybe 3 10# breasts and 2 14-16# whole birds. For the stuffing about 4-6 ounces cooked each. I don't know what variety of dressing your area is used to just that dressing is cheap so over doing it is OK.
