Red face Chicken Practice~~

I smoked up some chicken drums and thighs, and a beercan chicken for dinner this weekend. I also threw some sweet corn on and grilled it.
I used a mayo slather with just some fresh ground salt and pepper.
I smoke-cooked the pieces with white oak chunks ,left over from my kitchen remodel,for about an hour at 250, skin side up, then 20 minutes skin down. After that, I turned them skin up again and brushed a very light coat of Daddy's BBQ sauce that I got from Chibi in a trade round not too long ago. After the glaze, I let them cook to an internal of 165, and then cranked up the heat to 350. I moved the pieces over to the coals and cooked them direct for 5 minutes before pulling them. Then I threw the corn on and the rest is, as they say, history!
The skin wasn't bite through... but Oh, so close.
A little more practice, and I think I'll have the skin down.
