Default Wet aging brisket?

How long do you guys keep your brisket in the cryo before freezing or cooking? My Costco only gave a 7 day window on the best by date.

Knowing the package date helps I go about 21-30 days if I remember correctly Do a search there are a lot of threads on this I know there is one by Dr BBQ and I believe Ron_L has something too It helps to have a fridge than is not the house fridge as the door is not opened as often

I know what date it came out of the case and the day the label was printed but not the actual package date

Label says "packaged on March 1" "sell by March 8"

That being said I bought it on March 1st and that is when the label was printed. No other info.

Won't be. Its on the box it comes in and also on the label from Restaurant Depot. Middle number on RD label has what day it was killed out of 365 day year.
Otherwise your flying blind.

Actually pack date is good. Age 30 days from pack date.
