Well, I got up this morning and started the UDS; plan was for a 5 lb sirloin tip and a breakfast fatty.

I was planning on 5 1/2 to 6 hours for the sirloin tip (1:15 per lb).

Put the sirloin tip on at 7:00, run into the house to roll the fatty (sausage, potatoes, cheese, green chiles). It goes on at 7:20. Put in the new Maverick 732 probes, second cup of coffee, all is good.

Fatty comes off a few minutes after 9:00 looking great. At 9:20 the sirloin tip hits 150* internal :shocked: wasn't expecting it that early.

Wrapped the sirloin tip and put it an cooler to hold it. Only have 1 pic but it turned out really good.

Not sure why it finished up so quick, UDS was cruising at 225*.
