Default white sauce dipping temp

Never done or had the white sauce. Thought id give it a try. I have a roaster with three serving trays inside. I would make two red bbq sauces and one white. I want to put them in the trays and let people use the sauce if they want to. By they way I am doing this for a party and it is pulled pork and pulled chicken. My question is can you heat the white sauce or is better cold or room temp?

We've just done cold, but I would think room temp would be fine, heated, I'm not so sure about.
