Default WSM Pastrami

1st time pastrami. I used Thirdeye's method for cooking the flat. I used Montreal seasoning because I didn't have all the ingredients for his rub.
I really liked the flavor and texture of the pastrami. The wife likes it too!! Sandwiches 2night.

4lb Corned Beef. Soaked for 48hr and changed water to remove salt.






After smoking. Internal temp 145. Stick shows grain direction.

After pressure cooking

You gotta love the pastrami. I did my first 3 pastrami`s 2 weeks ago. yours looks like they would make a great sammie

Good looking Pastrami. Can't wait to do another one pretty soon. Did my first one about 2 weeks ago,i thought i died and went to "Q" heaven and my wife was right behind me.good stuff.
