I'd add a waterpan Grate above your diffuser below bottom Cooking Grate. Until then put water pan on bottom Grate and cook on middle Grate.

How much room from firegrate to diffuser ? May need to raise diffuser........

Got about 20 minutes worth of grinding to do (not tonight) and I'll do a practice/second seasoning burn and put food on it this weekend...stay tuned!!!

This pic looks like enough room from fire grate to difusser.......
Make a 3rd Grate Use bottom Grate for waterpan, middle and top for meats.
 
I was all ready to make a second grate and then I nearly set my angle grinder on fire and no I'm not joking about that...never seen a motor blow that spectacularly!

I've got the water pan on the diffuser still but I put a foil drip on on the bottom rack. To keep the grease off the diffuser.

Everything is running really stable now, I'm in the stall now about the go foil. I'm letting my bark darken slightly.
