Hey guys & gal's

My name is Scott, 26 and i live in London where i work as a chef.
I have spent the last 4 years working in fine dining kitchens and fell in love with BBQ after working at a Jamie Oliver venture called Barbecoa, which he opened with Adam Perry Lang.

I have since brought my first Barrel BBQ, and a Smokey mountain and am looking forward to learning and cooking some great barbecue.

Welcome! You can do amazing things on a Weber Smokey Mountain. It is a good cooker to start out with, for sure.

Adam Perry Lang has some good books -- well worth having. Jaime Oliver picked a good partner.

Traditional American BBQ cuts of meat may have different names there, but there are other Brits among the brethren who can help you with the translations. The easiest meat to BBQ is the pork butt, which is the upper half of a pork shoulder. Whatever they call it there, it is very forgiving, and is the staple of Carolina BBQ.

Here in Texas, brisket is king. But, it is also hard to cook right. I live here, and I haven't gotten right, yet.
