Default Foot long pulled pork tamales...

I usually make regular pulled pork tamales http://cowgirlscountry.blogspot.com/...k-tamales.html

but I ran out of time and made 4 big honkin tamales instead.

This was some of my pulled pork stash.


I soaked the corn husks


made my masa with enough lard to make the dough float..





and used one husk on each end then cut a husk to extend the middle...

pressed out my masa and filled with the pulled pork mixture..





rolled and tied...



set them on a rack on top of some foil balls..added beer and wild onions for the steam.
Covered and put them into the Memphis Pro ...





Normal tamales take about 45 minutes to an hour...
I checked these for firmness, then removed them from the smoker after 1hr 15 min.



They were the same diameter as a regular ole tamale but about the size of 4 tamales in length.
I didn't have a plate big enough for one. lol

I made some cactus rice salad to go with it..



It was tasty! and took about 1/4th the time to make than normal tamales. I'm not really lazy.. I had things to do!

You had me at the Shiner bock!! I've seen overstuffed burritos but that is definitely the epitome of hand made tamales!!

I moved to Missouri from Texas 11 years ago this week.....I pretty much have to visit relatives in Texas to find a tamale worth a hoot......Those are some nice lookin tamales, senorita...or senora....either way you are a tamale artisan!
