Some chopped up leftover chicken, onion, tomato, queso, shredded cheese, sour cream, fresh cilantro, and sirracha on a grilled flour tortilla.

AGREE!!! I doctored up some pork from a recent cook and it was glorius. I think I made the "mmmmmmm" sound with each bite.
 
I could go for one of those tacos about now
 
^^^ minor correction ... 366 - it's a leap year, so one extra day to love tacos.
