My new go to taco recipe and technique (pron)

I wanted to take a shot at my version of tacos al pastor. I think I hit it out of the park with technique and the recipe. This in now my go to taco.

First I cut up two pork tenderloins into manageable portions.


These went into the freezer for a couple of hours to aid in the slicing.


Out of the freezer and into the food processor with the slicing attachment.


Nice thin slices, partially freezing the meat really helps.


I made a paste marinade of
re hydrated guajillo and pasilla peppers
a couple chipotle peppers with adobo
garlic
crushed pineapple
cumin
salt
oregano
white vinegar


I marinated the sliced pork for about 6 hours


Fired a chimney of KBB and put on the cast iron griddle to get good and hot


Out of the marinade and onto a screaming hot griddle


At this point I dropped and broke our camera, my wife was pi$$ed, she asks why are you always taking pictures of your food. Not fun explaining to her that I broke our camera taking pictures of my food.
So on with the iphone. Pulled and plated with beans and rice, and tacos with shredded lettuce, salsa verde, red onion, cilantro and cheese.




These tacos were AWESOME, I highly recommend giving it a try. Sorry for the long post and thanks for looking.
 
Awesome tacos, love the fact that you used pork tenderloin! Hate that about your camera though. Get your wife to join, then she'll understand your insanity! :becky:

My wife too at the beggining was asking why the pictures? I told her because if post and no pics the brethren will tell me it didn't happen. Plus it better to get a visual.
 
Interesting technique, just might have to give it a go.

I dropped my iPad and cracked the case one day taking pictures of Q with it out of the cover. I DO feel your pain.
