Competition Chili - The Final Version

I'm cooking a local chili cookoff Sunday. I have been tuning the chili recipe over the last few weeks. I'm cooking chili for the masses. This recipe has been run through several taste tests by about 75 people on several occasions. A version of it won 1st place in a smaller competition last year.

Because it's designed to appeal to the most people, it has beans. It also has corn because some people told me they like the sweetness it imparts. It has a mild chili flavor with a little kick at the end.

How does it look? Either way, wish me luck!

We will be serving sour cream with it. I don't think I will do the cheese because of the additional cost. I have to cook 10 gallons of chili, so I'm looking to reduce the production costs. Sour cream really goes well with it though, so I was convinced to offer that.

Thanks, buddy. Use fresh corn if you can. If you can't, pick up some canned Mexican corn from Food Lion.
 
I love it when you contribute... it makes attaining perfection for me so much of a quicker trip because so many things you make are almost there. You come closer to the perfection I will eventually surpasses so much quicker than anyone I ever knew of.

Looks a lot like mine.

I use the same bean combination. One thing I do different is I cook the hamburger in patties, and then I dice it up. Looks like chopped steak when its done.

I didn't see onions or tomatoes, are you using a blender to pulverize them??

I'm using granulated garlic and granulated onion. I'm premixing the spices so that all we have to do is dump them during the comp. It's a way of simplifying things and reducing the opportunities for mistakes.

The way I cook this chili is, dump in the ingredients, bring it to a boil, reduce to a simmer, secret step, and serve. It's a model K.I.S.S. recipe.
 
Sour cream sounds good. How about Franks Red Hot Sauce on the side too? Love that xxxx on everything. :shock:
 
^If I can fit it in the budget, I will. But, the budget is pretty tight. I did a business case comparing costs and benefits along with the risks. If I place in the top 3, I should do well. Hot sauce and cheese were not considered to be big enough contributors to make a significant difference in the outcome.
