Default Question on freezing aged brisket

Once I have aged my briskets, should I remove them from the cryovac packages, seal them in a Foodsaver and then freeze or just freeze in the cryovac? I have been just freezing in the cryovac. Only problem I have noticed is that the last one I cooked didn't get quite thawed before I cooked it and it turned out dryer and tougher than normal.

For anyone that freezes their brisket, do you do the chilling in ice water before freezing or right into the freezer?

I freeze my brisket all the time. Remove from fridge after wet age right to freezer in cryovac and thaw over a two day period. Dont rush the thaw if you try to cook frozen meat it will come out lacking. I usually start thaw on counter top then finish thaw in fridge.
