I had the day off today and wanted to smoke something. Then I realized that the only good prospect in the fridge was a single rack of beef spares. I didn't really feel like running up an offset for the single rack so off the the Weber they went.

Used equal parts kosher salt and fresh ground black pepper (by weight) and just a bit of granulated garlic. They cooked faster than I wanted but they tasted good. Not like they do after 6 hrs in the offset at 225*. But good none the less. Got a few pics along the way.

Had a side of honey ginger baked carrots

Tried my 1st Beef ribs 3 weeks ago.My buddy has a 120 RF and we did 6 racks and a small brisket.After 4 hours they looked great,but he,as always,needed to splash and wrap them for another hour or so.
Came out great.
Hmmm,matter of fact,I have the leftovers in the freezer.Just might have to bust them out for lunch,LOL
