Which garnish to use for competition?
Guess I should have asked this question before now but what is the type of lettuce used in the turn in boxes for competition?

KCBS rules allow for green leaf lettuce, curly or flat leaf parsley and cilantro.
Kale, endive, red leaf lettuce or other greens are not allowed.

The produce dept. guys are notorious for peeling off the wilted outer leafs that look nasty and slicing off the brown end cap to make it look like a fresh head of lettuce just put out.. They usually do "pruning" at night when no one is in the aisles to improve appearance until someone buys it.

The rule is leafs of green lettuce, so iceburg as an example is legal.
I would recommend green leaf lettuce and stay away from other green lettuce. Jim

Todd,
Bring plenty of green leaf lettuce and lots of good parsly down to Osage and I will show you how we do the garnish - you can do the same or some other way. There are lots of ways that win - even without garnish. |
