The bark softens up a little and is not as hard after pressure cooked. The only liquid I use is about 3/4 cup of beef broth on bottom of pressure cooker. The meat sits on a rack above the broth not in it.

Last question. How long is the total cycle time for a 35 minute cook? I know it takes a while for a pressure cooker to cool to the point of being able to open it, but never timed it. Never thought about a electric PC

You can open it as soon as its done. Just push the pressure release valve and the steam comes out and then it unlocks.
