If the pork roast isn't from the shoulder, you generally want to cook it only to 140-150F. So there goes the slow.

Pork belly roast could be interesting though, brought up to ~190 IT.

Think of your cooker as an outdoor oven. Anything that can be cooked indoors in an oven that size is fair game.
I used to stop at the 24 hour store on my way home from work and pick up marked down meat. I'd then wake up the next day and try to figure out how to cook it in my kettle. The Joy of Cooking was my friend.
This was before this site existed. Or the Internet, come to think of it.

Regarding cooking low and slow I have found through experimentation that the height of the smoker really doesn't matter so you can actually cook fairly high, which is certainly more comfortable for the cook.

Besides mentioned already. Bacon, thin sliced spam, spiral ham, ham steaks. Venison, bison, jerky, porkbelly, cheese stuffed sausage. Right off the bat.
There are also alot of veggies that can be smoke LnS.

dont limit yourself. bbq is more than kcbs meats.

you are not limited to time or temp or direct or indirect or any particular cut of meat. blend what you call smoking and grilling for the full bbq experience

double smoked ham is great

thick cut bacon drizzled in syrup and brown sugar then bbq'd, who cares how long it takes

sausage cooked indirect gives the casing a satisfying snap.

Any large piece of meat sold in your local store is fair game. As are casseroles that are normally cooked in the oven.

Nope, not if smoked below 250*
Spiral ham

smoked bacon

apple/chipotle glazed spam

brisket/bison meat loaf

Sausage comes out fantastic smoked.
