The first pie is pickled cactus, mojo chicken thighs & red peppers. To make, combine chicken thighs with one bottle of this over night:
Grilled for about an hour and a half with a nice big hunk of apple:
All done:
Pull the chicken:
The star of the show. The cactus is pickled along with serrano peppers, so there is some nice heat to them:
Top the pie with the chicken, cactus, & some roasted red pepper:
To the egg at 550, about 9 minutes:
Cooling on the rack:
A second pie was topped with roasted red pepper, provolone stravecchio & roasted garlic:
Begin by lopping off the top of a bulb of garlic, add some olive oil, salt & pepper:
Wrap in foil & roast for an hour or so:
Remove the roasted cloves & add more olive oil:
Top the pie with roasted red peppers, slivers of provolone and the garlic, then drizzle the olive oil on top:
All done:
