"Shoulder!"

This was Charred Apron's winning entry in the 2014 "Chuck Primal" Throwdown


As chosen by R2Egg2Q for winning the "Baked" Throwdown.

CATEGORY DESCRIPTION - PLEASE READ:



R2Egg2Q said:
Cook any dish you like using a shoulder or part of a shoulder as a primary ingredient.



Cook thread should include a picture of the raw meat but the entry for the vote can be any dish you want as long as it uses the meat from the shoulder.



Possibilities include: Pulled pork, sliced pork, the money muscle, pork steaks cut from a shoulder, carnitas plate or even a carnitas burrito, grind up shoulder and make their own sausage, slice a shoulder into strips and marinate and make char siu, etc...


For beef: shoulder clod, pulled beef, possibly other dishes using chuck. For lamb I’ve seen folks use lamb shoulder for shawarma.



You may submit entries that are cooked from Friday 10/12 through Monday 10/29.

Entry pictures must be submitted by Noon Central US Time on Monday 10/29.

Assuming you’re referring to a Boston butt and not a rear end, that’s fine. Any part of a shoulder is allowed.

I wondered the same thing when this was posted, so I looked it up. Chicken shoulder is a real thing, prized by the Japanese. It's the area between the wing and the breast, near as I can figure out.

The oyster is above the thigh.
There isn't a shoulder muscle like a pigs on a bird. It's called the supracoracoideus and passes under the breast.
