Lookin' good. I've been working on a pastramied turkey breast method for about 6 months so I'm anxious to see the finish on yours.

results are in

here is what i ended up with.
Pulled pork , always delicious
Pastramied turkey, good but quite spicy, used steve raichlen's recipe.
Rolled turkey, grrrrrrreat.
Poblanos stuffed with shrimp, cilantro, and raw milk monteray jack. perfect. Wrapped in honey ham since i had no bacon.
Slaw, taters. Quite a good night had to invite the parents over, wife thought there was too much food. Good thing there is still alot left,
Pulled breackfast hash...............:-D:-D:-D

The rolled turkey looks good. I am trying to add more turkey/chiclen to our menu - could you elaborate on what you did? Thanks.

I filleted the breast and cut it in half opening it up (pic #6). I simply put butter, oregano, basil, garlic, salt and pepper. Then i rolled it up tightly and somehow used on piece of string to tie it up. I smoked at 225 for 8 hrs. until inside was 170.
It was a bit dry. But it was delicious.

You must have had help in taking all those pictures... I don't see how you would have time to do that and all the cooking too.

Prep work done at 1:00 am
Cooking done alone all day, wife does not cook....
I put meat on uds @ 8:00am left the house at 10:00 went shopping until 2:00 and all was well.
TRUST in the UDS
