Picked these up at Costco. Brined for about 2 hours in Sugar and Kosher Salt. Wrapped in Bacon. Sprinkled 2 with Dizzy Pig.

These have to be the best I have ever done.

Bacon wrapped pork chops. Whodathunkit! Good looking pig parts there.

Looks great. Did they come out tender??

I was surprised how tender they were. I expected them to be dry because they were so thick. Pulled them at 145º and covered with foil for 10 minutes.

The Egg just gets better and better with practice! :wink:
 
Pork Smoker, Could you give me the ratio of sugar & salt. They look great. Also I notice the coals weren't very hot.or did you add more coals? Thanks for any help, I think I know whats for supper tomorrow!!!:-D

A little over 1/3 cup white sugar and 1/3 cup Kosher Salt to a gallon of water. Fire was at 325º. Take them off at around 145º and cover them for 8-10 minutes.
