Diffuser in UDS
The first two butts I smoked I placed the butts in the middle of the drum and let it roll. So After reading and watching too many videos I thought I would add a pan in the middle with apple cider, beer and vinegar. But the butt didnt turn out as well as it did with the butt in the middle with no diffuser. What have many of you experienced and do you use a pan or diffuser?

The meat wasnt as tender and didnt have the burnt ends.

A UDS is designed for direct heat. There is no need for any kind of diffuser.
You answered your own question saying the butt without the diffuser was better. I have made many butts and briskets using the standard UDS configuration. Use it as is designed.

the only time I put any kind of pan in my UDS is when I have enough of them in there that the grease would put out the coals.

I have a diffuser for ribs only... keeps the center rack from getting done quicker,
