Default Lamb neck

Was discussing this in another thread...I get local lamb neck, and I think along with lamb ribs/belly are the best cuts of lamb to smoke.

This one was coated in pastrami spices and smoked over cherry. I had lamb stock in the freezer so I stuck that frozen brick in a pan under the neck. Ended up straining seasoning and reducing into a nice jus. Homemade brioche buns while the lamb cooked.

Final result... smoked lamb dip!

Looking good, sir. I have a big cook this weekend. Im going to do gyros with the necks I have, snacks for the pregame if you will... any approximate cook times? Obviously I’ll cook it until it pulls.
