PBC Spare Ribs
Two racks of spare ribs today, one with Meathead's Memphis Dust, one my own with chipotle and chili powder for heat.
Charcoal lit and in the barrel with 3 chunks of cherry wood, getting ready to hang the ribs. Ribs hanging, about 2 hours in...

And here they are out of the cooker...
Smoke ring... The bite through... I think these were the best ribs I've ever made, especially getting smoke, rub flavor profile, and tenderness all good. I have to say tenderness and bite through were about as good as I've tasted and definitely the best I've made.

The first time I posted pictures they were so big that the entire screen showed about 1/4 of the picture, so went with these. It might take me longer to figure out pictures than it takes me to figure out bbq
