Default PBC Spare Ribs

Two racks of spare ribs today, one with Meathead's Memphis Dust, one my own with chipotle and chili powder for heat.

Charcoal lit and in the barrel with 3 chunks of cherry wood, getting ready to hang the ribs.



Ribs hanging, about 2 hours in...

The bite through...



I think these were the best ribs I've ever made, especially getting smoke, rub flavor profile, and tenderness all good. I have to say tenderness and bite through were about as good as I've tasted and definitely the best I've made.

Nice work. PBCs have put out some good looking grub today. How long did they cook in total and any idea what temp you ran at?

Thanks! I saw some of those cooks in the PBC thread and they looked fantastic.

One rack was done in 2:45 and the other took another 20 mins or so. It was a great "they will be done when they're done!" moment for my son who was helping on the cook. He tested the 2nd rack both times and is starting to learn what done means!

The temps were very consistent at 300-310 the entire cook.

The first time I posted pictures they were so big that the entire screen showed about 1/4 of the picture, so went with these. It might take me longer to figure out pictures than it takes me to figure out bbq
