Hey all!

Just got started with smoking. Bought a used ECB. Will be doing some modifications to it (as well as some repairs). I'd post a picture of it right now, but to be honest, it's embarrassing. :) It's a bit rusted (exterior) and it looks like it's been used more than it has. It needs a water pan and I'm going to be installing air dampers top and bottom (salvaged from an old charcoal grill). It'll also be getting a new paint job, a new thermometer and I'll probably add an addition grill to the charcoal bowl to get help with air circulation and having the ability for the ash to fall through.

I've said that my first cook is going to be a brisket, and I'm sticking to that. Having done some reading around here I'm going to go simple with the flavors (S&P, maybe some onion and garlic powder) but not push the profile too far. I figure with the brisket, even if it's over-done, it's still edible. And the wife and I do love us some brisket.

Thanks everybody.

With money being what it is right now, the ECB may be a longer project than it normally would be. Though, I've been scouring Amazon and Harbor Freight for what I'll be needing so with the next paycheck, the project starts moving faster.

So far, I'm $10 into this project (for the ECB and $0 for the old charcoal grill). I'm looking at probably another $65 in equipment (probe thermometer, water pan, 2 analog thermometers for the smoker and a chimney starter). For the $75 investment, I will most likely have a smoker that I have a chance at actually being successful. At least I hope so. :)

Anyway, time to go cut some holes in the Brinkmann. Thanks again everybody!
