Default Padawan and Phubar's خروف with الكسكس Pron Pt.3

-starter sardines with baba ganoush,humus and Arabian bread (Padawan)

-main course lamb shoulder with tabouleh (couscous) and tomto sauce smothered zucchini/eggplant (Phubar)

-dessert smoked apple with yoghurt,smoked nuts and honey (Padawan)


Sardines were marinated in olive oil,garlic,red Spanish pepper,zalt,pepper...smoked and grilled them.
Baba ganoush was made from smoked eggplant.
Humus made from smoked chickpeas that were laying in homemade chicken bouillon.

Lamb shoulder was boneless and wrapped in a net.
I removed the net,seasoned the inside with Turkish lamb rub and a Phresh herb paste,rolled and tied it up,rubbed the outside with the Turkish lamb rub and Phresh herb paste.
Paste was a mix of olive oil,garlic,mint and rozemary.

Zucchini and eggplant were smothered in a homemade tomato sauce.

Smoked a whole apple,smoked some pecan and hazelnuts that were covered in honey...served with yoghurt and honey. (no pics)
