Default Smoked turkey breast serving size

Doing a gig for 60 people, serving pork loin, turkey breast and sausages. Never cooked turkey breast for catering, anyone got a suggestion as to how much raw weight per serving would be a safe bet. Was thinking 4-6 oz uncooked per serving.

Would you recommend using the Brisket Flat formula from the calculator posted in this section?
