Getting the Egg lit for a New Year's Day brisket. Got a 5lb flat prepped and ready to go. Perfect day for smoking

Finally got it on. Good thing this isn't all we had for dinner.
Got a little bath in Stubbs beef marinade then a light coat of kosher salt and a heavy dose of Bovine Bold.

Almost forgot it going on Best of the West lump with a couple of chunks of red oak and a small piece of pecan.
 
Just went in the foil with a little beef stock and another shake of rub.

Finally got butta probe. I'm the foil resting now. Late night snack? Don't mind if I do.

I love my craft beers, but sometimes nothing beats a good High Life.

Turned out pretty good. Very tender but not very juicy. I opened the foil after about an hour and the bark was coming off so I took it out of the foil and added some rub. Not sure if that was a mistake. The wife and my one year old loved it and I guess that's all that really matters. Thanks for looking. YImageUploadedByTapatalk1357097950.998240.jpg
 
Good looking brisket, that is a very well defined smoke ring, I forgot how those BGEs cook. Great cook.
