Need a good knife-Suggestions?
What kind of knife do y'all use when you need to cut/trim ribs? The knives I have are God-Only-Knows what brand (and how old to be honest with ya). I need a good knife for when I need to trim ribs (cutting thru bone). Suggestions?

I use a Boning Knife for just abut all my meat prep Victornox makes a good one and reasonably priced too

Most any knife will do you well for trimming ribs, just keep it sharp. There is no need to cut through bone when trimming ribs, you would need a bad azz knife to cut through a rib bone. You might want to check out You Tube and watch some video on trimming ribs.

Yep Vitorinox are good knives. I still have yet to add their deboning knife to the collection though.

For trimming, boning knives are great. For cutting, I like an 8" chef knife. If you want to knock yourself out, look for a local store that specializes in sharpening knives, as they often have older discount ones that are razor sharp.

Frog13...I saw one video where the cook trims a rack of spareribs,for a St. Louis cut, and it looked like he was going through bone. I may have to go back and watch it tho. Either way, I still need a good dependable knife as I practically have to saw...and saw...and saw with my POS knife I have now.

Ive been using a couple Dexter Russell knives that I really like. I use the butcher and the boning knife the most.

6" stiff Dexter Russel w/ white grip.
You cannot do better for $12 or so. Fisherman buy these like crazy, they sharpen well, I sharpen mine on an Arkansas stone. I use it for everything, skinning (not gutting) deer, cutting all meats, and all butchering. I would only go to my 10" on a big shark, Bluefin tuna, or swordfish. That 6" kicks other knives to the curb. They should charge $50. |

Yep, these are awesome! I caught a sale where they were $5 a piece, I bought 6!! Haven't seen that sale again.

I use Dexter-Russel Sani-safes, have done so since I was paid to cook.
For home, I have a whole slew of knives I use for when I want to play around with nice blades.
